
This post was written on Feb. 14 but I couldn't post it until I upgraded my blog, soooo... "Happy Balentimes Day" is what a first grader said to me when I was student teaching. I love that.
The above picture is of the little valentine bouquet I made my mom.
Dad got some peanut butter cookies revamped and improved with Splenda for his new diabetes. They are pretty good. The original recipe was called "Impossible cookies" from an old church cookbook. I changed it to splenda and added a little flour to make it more dough-ish.
"Impossible cookies"
1 egg
1 Cup sugar
1 Cup peanut butter
Mix, roll into balls and press with fork. Bake 8-10 minutes at 350 degrees then cool. These make a crispy pb cookie.
"Impossible splenda cookies"
1 egg
1 Cup splenda
1 Cup peanut butter
1/2 Cup of flour
Mix, roll into balls and press with fork. Bake 8-10 minutes at 350 degrees then cool. These make a more doughy pb cookie.

I tried the Splenda ones. I think I messed them up because I used all natural crunchy peanut butter. They taste good but they are more like peanut butter crumbles instead of cookies.
